PASTIFICIO MARTELLI

In the Pastificio Famiglia Martelli the semolina is kneaded slowly using only cold water, so as not to break down its quality and compromise its most precious elements: gluten and carbohydrates. The dough is then extruded from a circular bronze die: this creates a porous and textured pasta that perfectly absorbs sauces and amalgamates while stirring. Each format has its own die that gives it shape and consistency. The pasta, worked in this way, keeps all the properties that define its taste unaltered.

Drying follows the traditional method; temperatures below 36° C, homogenous ventilation, controlled humidity.  In addition to the quality of the raw materials and the slow kneading, what really characterizes the pasta more than anything is the amount of time it takes to get a complete drying of the product. It is during this phase that the properties acquired through cold kneading and bronze drawing stabilize: the porosity that allows the sauce to be absorbed, the rich nutritional value, the excellent digestibility.  50 hours: this is what it takes to dry the pasta; more than two days in order to get a tasty, digestible and nutrient-rich pasta.
